I think pancake sunday is becoming a bit of an obsession.
This morning I decided to try out something different from the regular buckwheat pancake; Adding acai berry powder (I got it from http://www.organicburst.com ) to the batter, topping off with fresh berries, dried figs & hazelnut butter ( I got it from http://hunterskitchenette.com)
If you haven’t tried acai before, I definitely recommend it! The antioxidant-rich acai berry can aid in weight loss, give skin a healthy glow, fight cancer, and provide an energy boost. Let's keep the post short and carry on with the recipe!
Acai Berry Buckwheat Pancake
Ingredients: 1 medium banana / 1 egg / 5 tbsp buckwheat flour / 2 tbsp milk (any choice of your milk) / 1 tsp acai berry powder / 1/2 tsp vanilla
Toppings : Hazelnut butter, dried fig & berries
To do this: Mash the banana and whisk together the remaining ingredients in a bowl. Heat a pan with oil and start cooking your pancakes till golden brown.
